I run 188 stiff bros with Freerides and Denali TTs. I think they make an excellent all-around setup for me. At about 190lbs, I think the stiff flex is just about right and very easy to work into different turn shapes. I'm not peppering the zip line in bumps or purposely seeking out insane speeds in the tightest trees, but I wouldn't say this setup isn't highly maneuverable. Their light feel is very nice. I have some 186 LPs mounted tele, and those are a little stiffer flexing with more heft. For inbounds and firmer conditions I prefer the LPs, but for any kind of softer snows, I'm on the bros inbounds or touring. They are so smooth.
My advice to the orginal poster is that the 179s are probably too short for you and to instead consider the 188 stiff bros or something like the 186 LPs or 190 Goats. Maybe I'm all wrong about the 179 bros for someone over 200lbs, but I just don't think the 188s would be overkill either.
