    I’ll let you guess what everything is. But those small shrimp/cod balls were the star of the show.

    The chicken melted off the bone.

    All in all, I’d call Oden the stew of Japan. Simmers forever, melts, and everything kinda becomes one. And the broth is usually quite fishy, in a delicious kinda way.

    I’m working my head for a way to incorporate fish balls into a paste for tacos to layer with refried beans and rice accompanied by something else crispy.

    Fusion notes. It’s how my wife and I cook. We make, we think, we talk, and then we make something new. Or-- one of us walks into the kitchen with something and lightbulbs go off.

    Probably going to try first attempt at chicken thigh udon tonight. I want a good complimentary flavor marinade idea so I can grill the remaining thighs from the package.

    Watcha cookin'?

    Soy sauce, sake or white wine, garlic, ginger, brown sugar, salt and pepper for a marinade.

    For a glaze for the second half of grilling, from what I have in my fridge right now— orange marmalade, cayenne peppers, garlic and ginger, salt and pepper,all ground fine with a blend stick.

    I finally got around to doing this roast chicken recipe the other night. This is the way. Stop what you’re doing and go buy a bird and buttermilk. Seriously recommend. Easiest way to get a near perfect chicken.

    Working on a meat sauce for spaghetti, made with elk, onions, garlic, some cheap canned spaghetti sauce, canned diced tomatoes, green and red bell pepper, balsamic vinegar, salt, marjoram, basil, bay leaf, thyme, savory, and a healthy dollop of my home made jalapeno pepper sauce. (I realize that a proper Italian red meat sauce would most certainly have oregano, but I'm fresh out, and just using what's in the house). It's still cooking, and will be a while, you can't rush a good spaghetti sauce.

    Grilled pork chop, fried Pink Lady apple, asparagus, and tots. When I came home from work there were four bananas looking at me funny so banana bread for dessert. I brought the other banana bread to my mother in law. I sliced it up and served it to her with a nice fat scoop of vanilla ice cream on top.

    Do any of y’all have a tikka masala recipe yr excited about?

    I have been
    Sautéing an onion in butter+oil
    Adding ginger+garlic and then diced ambiguous long red chiles
    Then garam masala+toasted cumin+cayenne and some hing powder
    When it smells right I add four grated tomatoes and chopped fenugreek leaves.
    And stir in some yogurt when things taste like they have depth.

    I need to experiment with dehydrating the fenugreek leaves, re dried oregano vs fresh.

    The Moti Mahal Cookbook uses a slightly different order of ingredients that I need to try.
