    By all means you do you, I went deep down the acid adjusted rabbit hole a few years ago. But after that I switched to ferments because of the complexity. Obviously the time/space invested is a bit much for home setups.

    Drink of the spring/summer so far has been the Americano.

    Equal parts Campari and sweet vermouth, soda, orange wheel.

    Crushable as the kids say.

    Ok, is this anything?

    I got some pineapple/coconut juice at Whole Foods so I’ve been making a margarita/pina colada sort of thing.

    Tequila, Gran Marnier, that juice, lime and soda. Feels tiki-ish but with the tequila bite

    Not too sweet, not too hot, and basically a 50/50 pour with tequila. If you don’t want to make your own, but still want it to taste good.

    Haven't heard of it, but that actually sounds pretty good! You should come up with a name. I love tiki inspired drinks during summer time. Speaking of which, it's time to finally pick up some rum and gin for the season. One of my favorites for the summer is one of the most simple. I freeze giant 2" cubes of good quality coconut water, like the pink stuff from Harmless Harvest. Then simply pour a good aged rum over it. As the ice melts the flavor gets more coconuty and it's really refreshing on a hot evening. My go-to rum has been El Dorado 12 year. Holy crap this stuff is good for the money. Like $30 and it's about as good as anything I've had in the rum category.

    I need a I try more rums. I’m not a huge fan but I wonder if a nice rum over ice would be better than just rum cocktails?

    Im just saying, sometimes people try too hard with the drink specials but that is both delicious and easy. No need for a smoker, or infusions, or exotic fruits, or some random ass bottle of a rare apertif that you’ll only ever use for that one concoction.

    It’s summer pool drinking at its best.

    Oh for sure. Just giving you a little shit, but since moving to AZ I’ve been exposed to the spicy marg and it’s definitely delightful. Same with espresso martinis. People love them for a reason.

    Start with one like I suggested or of similar caliber and you'll see there's a BIG difference than what typically goes into rum cocktails. Kind of like Cuervo Gold vs something like Don Julio 1942. But UNLIKE spirits such as Tequila or Scotch, you can experiment with rums for vastly cheaper sums. That's what's kept me from getting into those too much, too high a barrier to entry to trial and error very much. But rum? Sheeeit. You can get a decent bottle around the $10-20 mark and $40 is top shelf territory. Don't like it? Just toss it in a tiki drink or other poolside cocktail. No biggie. I've come to find that I generally like the Demerara rums like the El Dorado (from Guyana) I mentioned above, but I also like this Dominican one, Ron Barceló Imperial. A great sipper for sure and pretty cheap! Both come in fancy boxes and bottles which is a nice touch for less than the price of a cheap tequila. Haha.

    Hell yes, rum talk in the padded room. Buy a couple bottles to compare and contrast, the cost of entry is too low not to. Jamaican rums are my personal go to, Smith & Cross is sublime for ~$30, great in Kingston Negronis for something more booze forward or painkillers for pure boat drink vibes. Rum neat or on the rocks never really does it for me, but toss a squeeze of lime and maybe a sugar cube in with a pour from a nice bottle and I don’t know how you can hate it. Coconut water ice cubes is a great idea in the same vein, gotta give that a try.

    Start with a bottle of Wray and Nephew over proof white. It's cheap as hell, widely available, and makes the finest daiquiri you'll ever taste. Once you've got that down, you can head in a couple different directions.

    Want something more like whiskey - a sipper? Try a bottle of The Real McCoy or Appleton 12. Something sweeter? Diplomatico! Something just as funky fresh but with a different flavor profile? Neisson Agricole Blanc. Smoother/more honey and less funk? Go for an aged Bacardi like their 8 year or try a 5 year aged plantation. DO NOT MISS OUT on the Plantation Pineapple bottle, either!

    Once you have a decent library, pick up the book Minimalist Tiki, grab some fun fruit juices, and let the real party start. Nothing like drinking zombies and painkillers in the summer.

    You pretty much nailed it, tgapp! Rum is SUCH a fun category because the variety is simply crazy. There's pretty much something for every palette. When people tell me they don't like rum, I have to ask why, and it's usually because they never went further than cheap Bacardi. When I have them try something else, they'll be like "Woah! That IS good! Guess I like rum after all!" Haha.

    I've mentioned the drink before I think in this thread, but good call on the Planation Pineapple! It's a bit of a cheat versus home-infused which is probably better for the drink, but try out the Bitter Tears if you haven't already: https://robbreport.com/food-drink/sp...il-1234800851/

    The Bacardi 8 is also good. Funny thing is I used to kind of hate on Bacardi as a brand (cuz I only had their cheap stuff like my friends). I was wrong. I've since learned they make some fantastic rums too for really not that much money.

    .5 oz pepper brine
    Peppers for garnish (mine don’t float unfortunately)
