    Such a solid brand. We don't get a ton of real Mexican stuff up here but this brand is plentiful and everything I've tried of theirs is great.

    Well, nachos are hardly a “real Mexican” dish, although you could argue they were invented just across the border in Mexico to appeal to American tourists. Most people would call it Tex-mex. And it is usually made with queso, aka Velveeta American processed cheese.

    Anyone else stop eating seafood?

    Farmed fish and shrimp are horrible for the environment and garbage on the plate, and the wild caught resource is just getting hammered by overharvest and climate change. Even the "sustainable" catch seems like window dressing to me. I'm about down to Oysters for guilt-free seafood consumption. Anyone else?

    There are definitely some options that are sustainable, yummy, and affordable. Check seafoodwatch for sustainability ratings. Check with your local fishmonger at the “fancy” grocery store for some suggestions. Many Steelhead and Arctic Char farmed options are great.

    Roasted some poblanos and stuffed em with a mix of cumin and guajillo spiced sauteed butternut squash, onions, jalapenos, black beans, and reduced tomatoes puree then topped with shredded jack, panko, and cilantro then baked in a 450* oven till it got a brown and happy. Didn't suck

    dry black beans
    canned diced tomato
    fermented green tomatoes
    roasted anaheim peppers and garlic
    canned chipotle peppers in adobo
    frozen corn

    Lemon juice
    Garlic
    Sumac
    Salt

    Blend

    Pour over cut up pitas.
    Mix by hand
    10 minutes at 425 in range set to air fry.

    New favorite snack.

    I think it depends where you live.

    I have my doubts about sustainable seafood as well but we stick to shellfish with a clear provenance and wild caught salmon from a friend that was doing the fishing. I treat something like tuna the same way I treat a steak, once or twice a year splurge where I am going to indulge in the best I can find.

    When we lived in Baltimore I trusted buying small fish from the guys that went out on day boats. It doesn’t take long to talk to someone like that to figure out if they’re doing the right thing or not. We did the same thing last time we were in NorCal, stopped to talk at the Noyo river and bought from the fisherman that made us feel the best. Turns out some of his catch was on our plates at the Michelin starred place the next day.

    Do you buy all your meat from someone practicing sustainable husbandry? How about your eggs and dairy? No spray vegetables at the farmers market? Even wild caught oysters have their own negative implications.

    We buy more meat now than ever for the baby. He eats grass fed lamb/beef or a scallop most nights. Oysters are one of the best things for him right now but I can’t bring myself to buy oysters in SLC. We are going to feast when we are on the Olympic Peninsula this month.

    I've been making shakshuka every week recently. Now with bacon, avocado and might have gone a bit overboard with crumbled feta.
