Prepping veg for roasted tomatillo salsa. After all this stuff was blackened and blistered under the broiler I tossed it in the vitamix with salt, olive oil, lime juice, and cilantro. Then, after it was nicely chopped, I put about a third of it in a bowl and tossed in an ear's worth of roasted corn that I cut off the cob. Dy-no-mite!

I prefer to take the skin off peppers after blackening. Never roasted the tomatillos. They benefit from skin removal too?

The toms blacken a bit but then the skins split and they start to lose moisture so they get pulled and tossed in the blender before they're really dark.

I went back for three more shortly! The "asian pesto" was an off-the-cuff creation and totally bomb:
1 extra large clove garlic
1 bunch cilantro
1/2 bunch scallions
Big hunk ginger, ~3 Tbs worth
1 Tbs tamari
1 Tbs fish sauce
1 Tbs olive oil
1 Tsp Sriracha
1/2 Tsp toasted seasame oil
1 Tsp glycine powder (a sweetener, sub in sugar)
Blast with the stick blender and enjoy.
Also, I bought some macha powder recently and love it. I'll never buy regular green tea again. If you like espresso, strong french press or other "chewy" varieties of coffee, this is the tea for you.

Peaches are $2/# right now. I can dry two batches a week with my REI dryer. About $12 per gallon bag. Owen can eat one in a week. I'm trying to get ahead so I have them for pocket snacks for ski season.

A few months back, I posted "WTF to do with all these eggplant".....garden delivered some nice tender softball sized fruits.
Go to recipe is fries! Heavy salt and let them sit for 30 minutes, rinse and pat dry. Flour + egg + panko. Bake at 450 until golden brown.
Sauce is Greek yogurt, feta, oregano, S+P, lemon juice.
Tasty!
