    PSA: Last time I was at Costco in Superior, CO, they had PRIME brisket packer cuts for $2.99/lb. Holy shit would that be some good BBQ. (Last brisket I smoked I bought from Kroger - it was a flat, it was not particularly well marbled (choice grade), and it was $8/lb.)

    Yup. Same story with the Costco over in Lone Tree. 2.99/lb for Prime full Packers.

    Great price. They just don't fit on an egg.

    Really? I thought it would fit on my Akorn Kamado. Maybe have to trim the edges a bit, but I do that with brisket since the skinny edges always overcook anyway.

    They don't fit in my smoker either. I just kind of bunch the meat up. Once the meat shrinks up, it fits fine.

    Try taking the flat part off , putt it in the freezer for about 20mins, (makes slicing easier), and then slicing fairly thin. it's damn fine sliced super thin and made into steak sammies.

    Our local Costco had pork sirloin for $0.09 a lb last week. That is not a typo. Sadly we missed out.

    Last year we did ribs & kebabs, this year I'm aiming for Cuban pork on the Egg w/rice & beans and Cuban sammiches. Like so

    I'm going to put a bacon wrapped, sausage stuffed chicken in the smoker with a rack of ribs leaned up against each side. Should give me dinner for Tu and Wed too.

    I'll also cook a pot of beans over the fire.
