i think what your talking about is the delay between the time you press the shutter and the time that the camera actually takes the picture. If this is correct, you want to check for shutter lag.

thats actually not shutter lag, you are looking for a higher frames per second rate(FPS)
go into a best buy or some other large camera retailer and play around with the cameras. FPS should be a marketed number, i dont know how to quantify shutter lag except by holding the camera in you hand and playing with it.
www.imaging-resource.com provides excellent camera reviews and data including powerup time, shutter delay, battery life and all sorts of other stuff.
If you care about frames per second, the memory card's write speed matters too. Those number can be hard to find since the published times (e.g. 66x) number refers to the read speed, not the writes.
If you have a problem & think that someone else is going to solve it for you then you have two problems.
I think what you want is the new Nikon D3.

There are next to no p&s cameras out there with FPS higher than 2fps because manufacturers sacrificed framerate for megapixels.

I've been researching this. bang for the buck the canon a610 or current generation is capable of close to 2.5 fps with a high speed card. nice camera but a bit bulky for a p&S. if you get a canon search for Summit's thread on dialing in the manual settings for ski photography. the canon S3 IS is another solid option at 2.3 fps. I have one of these too but have some gripes with it. the viewfinder is digital so it blacks out between frames. I take alot of wakeboarding pics, and trying to pan after a rider with a blank viewfinder is a pita. In skiing photography where the subject is coming straight at ya, it might not be much of an issue since your movements are less. I am currently about to pull the trigger on a panasonic lumix tz3. This little guy has gone largely underrated. Panasonic makes the leica digi cams, and this one has the full leica glass on it. compact body and a 12x optical zoom lens. 7mp with an 8.5mp sensor, so you will get nice snaps. don't get caught up in the mp race if you're looking for high fps out of a point and shoot camera. the panny will do 2fps at full res and 3 fps at fine res until the card fills. I can't wait till I have enough $$ to get one. Nice and coat-pocketable too.

Canon no longer produces a 2fps capable point and shoot. They decided cramming 50% more megapixels on the same 1/2.5" CCD is more important. You can buy out-of-production models like the G7/S3/A610/A700/A540 on eBay.
