Margarita elk balls. Cleaned out the liquor cabinet and needed to use up the last of a bottle of tequilla and Grand Marnier. Otherwise, they'd just be normal elk balls.

Oooohhh....now we can have a flame war about HOW GRAND MARNIER FUCKS UP A PROPER MAGARITA!

    Good blanco tequila
Cointreau or other 80 proof triple sec
Simple syrup or sugar (preferably superfine)
FRESH lime juice, key limes are preferred

Combine ingredients. If using sugar, dissolve before adding ice. Add ice. Shake. Serve neat. Salted rim optional

NO FUCKING GRAND MARNIER, NO FUCKING ROSE'S LIME, NO FUCKING AGAVE SYRUP, NO FUCKING BLUE CURACO, NO FUCKING STRAWBERRIES, NO FUCKING SWEET/SOUR MIX

Don't worry, plenty of Cointreau and good tequila left in the cabinet. Just cleaning out all the crap people left from parties over the years. Poured a lot of apple flavored whatever out. Thought I'd use up things that were at least pseudo drinkable. Might blow your top that we also blended it because it was shitty tequila, GM, and lime juice. Ended up pouring half the pitcher out. The meat balls were great though.

That's a lot of elk balls. Someone must have hunted over their quota.

I hate gimmicky shit. Anybody with a weber that likes to grill any bone in chicken should look at the vortex. Been abusing the shit out of mine all summer.

Smokers, grills, and BBQs. What are you cooking?

Crowd pleaser recipe ::: ridiculously easy, & cheap

People ask me for the recipe, and I’m almost embarrassed to tell them, but it’s not any kind of alchemy. Just simple cooking.

Chicken pieces (your choice, “tenders” shown in photos)
Grate the skin of a whole lemon
Toss with extra virgin olive oil, pepper & salt (white pepper is best)
    Grill

    Enjoy the goodness

Serve over Caesar salad; or on a sandwich with avocado; or over greens with avocado; or over grilled green veggies (julienned beans, asparagus). Can’t go wrong.

Also easy to prepare at camp or off the tailgate.

Don’t overthink it; serve it to people

    So good.

I do a very similar one but add garlic and oregano and a dash of dry white wine for a Greek bent. Let it soak for a day before grilling and serve with homemade tzatziki. I'm on a big lemon kick this summer.

Is that primarily used to brown stuff you cook in the water bath?

More soul food than BBQ or smoker but doing southwestern style black eye'd peas with ham chunks. Simmered in crock pot with onions, bell peppers, and chunky salsa all night. Added ham chunks this morning. Friend brought some down home collard greens as the side.

Its a broiler that runs off a propane tank. Gives a steakhouse like sear.

Mainly for steaks. But can use it as a salamander.

I've got a 36" griddle coming too. Hibachi time.

Thought about that. The smell might be horrendous, and I'd still be sketched about feces infused food. Will clean thoroughly then fire it up on high for a while.
