Carcass - 99% responsible for both goregrind and melodic death metal. Did what they did and split. Would not have had it any other way. The reunion tour was incredible. "Nercoticism", imo, was their finest work.
Death - Chuck was/is death metal - any and all albums were amazing.
Morbid Angel - the A thru F albums were amazing. They have since fallen below the radar.
Gorguts - "Obscura" is one of the first/best technical death metal albums ever.
Candiria - don't hate - they consistantly killed it in many different styles of metal/hardcore
Meshuggah - in a league of their own
Dillinger Escape Plan - whatever "core" you want to call it they are talented musicians.
Testament - "The Gathering" is one of the best metal albums ever
At the Gates - had the scene by the balls in the mid 90's
Suffocation - probably the most relevant/consistant band in death metal
Despised Icon - deathcore isn't as gay as everyone says

I've been listening to Terror Propaganda by Craft a lot lately. It's an older album (2002, I think) but the vocalist is inhuman. I don't really listen to a whole lot of raw satan corpsepaint style black metal anymore - mostly because the genre is clogged with a million shitty Darkthrone clones - but Craft do it right.
Blood Must Be Shed by Zyklon B (not to be confused with the shitty death metal band Zyklon) was recently reissued - all I had before was a cassette tape. Another great black metal "album".
