If you’re in good shape and short on time, steep and quick can trump shallow and effecient. Higher risers are also nice for breaking trail for a yoyo track or navigating tricky terrain obstacles. Or if you have limited dorsiflexion. Its nice to have the option.

Just recorded a video of full removal and replacement. Took 5 minutes for 1 binding which is a minute more than my radicals.
Re the brakes just just snap in when the back of the binding is removed
