^^^ This came out awesome!!! I sauteed some minced shallot in the pan (with bacon grease obviously) and proceeded to sear my ginormous scallops about 2 minutes (no more) on each side. They came out phenomenal. I also sauteed some baby bok choy in the same pan to serve with the scallops - yumgnar!
Bacon Grease is great for camp/bonfire enjoyment. A buddy of mine collects and stores all of the left over bacon fat from each winter in glass jars. Meanwhile, I collect as many discarded christmas trees as I can find along the side of the road during the winter. We wait until late April, when the snow has mostly melted and the Christmas trees have gotten really dry. Then we smear the bacon grease on the trees and toss them onto a hot fire one at a time. The more needles the tree has the better. :FIREdevil
