I’ve got a pair of Fox Defend Fire pants from about 3 years ago that I use a lot in shitty weather. Not totally waterproof though.
Wife just got a pair of the Ranger 3L Water pants. Way better for winters here.
We’re not XC people. If we were I suppose we’d go for tights and more breathable shit like that.

Just knee warmers or leg warmers and bibs under baggy shorts is good for fairly cold temps. Then I have some tights i can put over bibs, some thermal knickers, and softshell pants that i can wear over the thermal shorts when it's really cold. The hands and feet are generally the limiters for riding in the cold though.
I just got some pi mtb pants, not sure how those are going to feel in really cold temps. They claim to have some water resistance but are fairly thin and light. I think I'm going to get some of these plus some full length bib tights.
Has anyone been on one of the Giant Crest forks yet? Thinking of picking up a new Fathom 29er but the fork is a big unknown. Although, I'm not opposed to just replacing it down the road if it sucks? I'd like confirmation that it doesn't totally suck though
Cold/wet weather riding gloves: what do you guys like? The biggest problem I have with most of them is that it's really hard to find a lightly insulated and/or water resistant glove that doesn't have a bunch of padding and other bullshit on the palm. Even though it sounds goofy, I'd love a glove with a goretex or similar membrane on the back of the hand, some light insulation, and a plain clarino palm. Obviously the palm wouldn't be waterproof, at all, but if it's drizzly, or foliage is damp, my hands often get cold and wet through the back of the hand, but my palms stay reasonably dry if I just keep 'em on the grips.
I've got the Fox Attack Water gloves, and they're not bad, but not actually waterproof. Just a DWR coated, lightly insulated glove.
I've got a pair of Fox Flexair that I really like when it's either cold (which means like 50-60 degrees here), post-rain (easy to strip them off in garage and not have mud dripping off me on the way to the shower), or digging / riding in poison oak areas. They're pretty breathable, and are good up until around 65 degrees with pads under them. I ordered a set of the NF DP3 pant, but haven't received it yet.
Not pants ever unless it's raining. Then rain pants. Tights and/or knee warmers even in snow. Hate riding in pants.

Edit: look at some ice climbing and snowboarding gloves if you haven't already. They may have something that will work.
Granted you're also riding in more consistently wet conditions that I am out here.
I've had a few versions of the softshell "lite" pearl izumi gloves and generally like them. Insulation on the back, nothing on the palm and not padded. Had the "pro" ones, those wore a hole in the index finger after a few months, warrantied them and got a slightly different version called escape I think, lost those, just got myself the current one

Wore them the other day, it was a little damp and my garmin says the temp got down to 36 at one point but was generally about 40. I did notice after changing my flat going down the descent my hands were a little wet and cool, but generally they were good. I have a pair of the poc thermal gloves too which are heavier and have some insulation on the palm.
The only thing I can complain about so far is that they could have a little shape to them to fit better when i'm holding the handlebars. They're comfortable and fit perfect just wearing them but get a little tight across the back of my hands when i'm actually riding. hoping they'll break in a bit.
I didn't know that the APL (anti pants lobby) had such strong representation on TGR. I hate tights. They're a necessary evil on the road but not on a mountain bike.
Knee warmers work wonders, but for really cold, and cold + wet, pants are the way to go.
If it's too cold to ride in shorts + knee pads + tall socks, then I'm gonna go skiing.
For gloves I carry a pair of Black Diamond goretex shells. No insulation, just shells. I wear whatever gloves make sense for temp then carry the shells in case of snow, rain or a major temperature change if things could change.

They feel good on the bars. Cheap enough to be no risk. Winter is short here and I have a preternatural ability to lose or destroy winter MTB gear, so I stick with cheap stuff.
