160 days would take a bit of space if you were to offer it regularly. I wonder how much weight loss they deal with. Not only evaporation but cutting off the dry bits and mold etc..,
FWIG aging is a art. I haven’t messed around with it much aside from a relatively short “wet” age. May have to experiment a little...
