Don't go to Souzas. As far as Churrascarias go its pretty mediocre. And Burlington has the worst waitstaff out of any town in America. I take that back, Boulder is pretty bad too. Burlington is really lacking in good restaurants. And when there is something good, it either a, burns to the ground, or b, is completely ruined by hippy college students who cant bus a table.
Best in Vermont is probably Christophes on the Green in Vergennes (www.christophesonthegreen.com). Thats the most surefire choice for a nice evening out, and the food is some of the best in new england. Three course prix fixe was under 40 last time, and the setting is incredible.
Black Sheep Bistro in Vergennes is also great. If you are looking for a less formal meal but still outstanding then head here.
American Flatbread in Waitsfield, if something organic/vermont-ish is desireable.
If you are keen on driving, L'Express in Montreal.

Most everything's been covered here. I just wanted to add votes for Alchemist, Pie Casso, and the Materhorn. Iride is THE bike shop and they MIGHT tell you where the town loops are.There is some extremely fancy dining to be had in Stowe. Steve and Erika's, Trapp Family Lodge(I work there) Norma's at Topnotch, and the Blue Moon(not too fancy but good). Hey DaveVt my sister Hannah works at Blue Moon too. Drive into Smuglers Notch and take the Toll Road or Gondola to the top of Mansfield. Have fun!
Ha, I actually worked with Erika a few years ago. I never made it to the restaurant as it was a bit classy for me, but she is real cool and I support the place by default. If I'm not mistaken it's the one by the high school on the corner of the road going up to Trapp's.
You could always get wasted and go to KKD (Kountry Kart Deli) in burlington at 3am and get a rise and shiner. The drunker you are the better it is, I have sworn it was 5 stars before. Do the math Super fancy meal out: $30-100 per person, vs. Handle of gilby's finest vodka: $10 split by 2 people: $5 + KKD $6 +/- $2. So you are looking at a max of $13. Just think of what you could do with the extra $18-88. Hell that could be a new set of bindings right there.

Taste in Burlington (http://www.tasteofburlington.com/) -- Run by a phishhead, right on the waterfront, creative bistro with a cool, jazzy atmosphere.
Starry Night Cafe (http://www.starrynightcafe.com/) -- About 20 minutes south of Burlington on route 7. I've never had a bad meal here. A little bit of a step up from Black Sheap Bistro which was also mentioned, and is also very good.
Kitchen Table in Richmond -- Classic good meals, but can get pricey. 10 minutes outside of Burlington.
Single Pebble (http://www.asinglepebble.com/intro.htm) -- Awesome unique Chinese cuisine, call ahead for reservations.
I've got to caution against Christophes. I've had great meals there, and some very forgettable ones with terrible service. For that kind of money I think you can get better bang for your buck elsewhere.
Other places mentioned that I'd second: Alchemist, Shed, Picasa, KKD for the Rise and Shiner, Pennyclause for breakfast if you can get in the door, Tiny Thai for reasonable takeout, Bobcat Cafe in Bristol, American Flatbread. That should keep you full. Good luck...
Hen in the Wood in Waterbury is amazing! It's just off exit 10 heading toward Stowe. I went there with my rents last year during graduation and it's awesome. It's an old watermill that was converted into a great place to eat. I got duck last time and hands down it was the best duck I've ever had. The wine list is really good and the deserts are great too. Plenty of places to eat in Burlington as well. You can always go apple picking this time of year too.
