180 people is a fairly big wedding, welcome to a world of hurt between now and next May. You should have someone kick you in the nuts a few times so you can get used to the feeling.
Airforce chapel....depending on whether thats a fit for you and your soon to be bride. red rocks is cool.
I got married at the Chapel at Red Rocks...it's rad. However, I think 150ish might be the max you could do there without being too squished.
I've got more suits than Liberace, but less than Eastvailhucker.
Sorry, we are looking at the Denver area. There will be flatlanders. Not super formal, but probably suits for guests.

As someone said, Red Rocks is really nice, but it may be a little small.
The Brown Palace is the classic old money place in Denver.
The Denver Botanic Gardens is another sweet location.
I've been to big and pricey weddings at both places, but I like the Gardens better because the ceremonies were outside and not as stuffy and formal.
If you want to do any of the really popular places you should nail down a location fairly quickly because I'm sure a lot of them get booked really early for May weddings.
Or go really big and do it at the Sleeper House off of I-70.

Max number at the mansion is 125 if I recall, but they have a tennis pavilion that will hold at least double that. They allow you to supply the booze which really helps cut costs. Their in-house catering is very good.
We got married up in Loveland at the Sylvan Dale Guest Ranch, very cool place right along the river, our out of town guests really liked it. I am not sure about the max capacity though. The one benifit was they do not have a liquor licence and you are on your own to provide it, which actually made our bar tap realatively cheap. Some places charge crazy fees to bring your own booze, and price their bar services pretty high.
We did check the place out in Lyons that was mentioned, up on the hill overlooking town. Very nice, but more expensive.
my friend was going to do it at red rocks also. the place is amazing! for some reason (i did not pry too much) that didnt work out, so now they are getting married at the denver botanic gardens.

I just had my wedding at a park 5 miles up the poudre river 130 folks and no charge for the use of the park. Just had to pay for parking.
It worked out great.

Along the lines of RedRocks, maybe consider Arrowhead golf course.

just random ideas and dont know if you could even book something there without being a member of sorts. worth a call i suppose.
We checked out Arrowhead, and there liquor restrictions were going to make a very expensive bar tab, wine was like $12-$15 a bottle, and they had uncorking fees if you brought your own. The other downside, is your ceremony is right off the 1st tee box, and they do not stop for weddings. Keeping bar costs down was high on our priority list.
We got married at Hudson Gardens in Littleton. Flowers bloomin, mountains in the background. It was nice.

I'm not gonna be any real help on the wedding spot front other than to suggest that the Evergreen Lakehouse is pretty nice.
