For the rear shock, once you have set the appropriate sag, then turn the rebound all the way slow, and back it off about 5 or 6 clicks.
For XC type riding that's a pretty good place to start. Rebound too slow, and bumps feel harsh, too fast, and you feel like you're getting bucked.
Front shock is pretty much the same, set the sag first, then rebound speed. Too slow and bumps are harsh, too fast and you got a pogo stick.
What ever your settings are to begin with, use them as starting points. Go ride and adjust as necessary.
The coefficent of desireability is inversly proportionate to the degree of availability.
