    Bread

so, i am about to start making bread, i was inpired to try it after eating some really good bread from a little bakery in silverplume called the soap and truscut

(awesome little place it opens at seven so any one driving up to Loveland or summit co from any where east of Georgetown is encouraged to support the coolest little bakery i have ever been to)

So, does any one have any good bread recipes?

Make your own sourdough starter from unbleached rye flour. Use it in place of store-bought yeast or leavening. It will be truly unique to your kitchen. Bread is a very cool use of fermentation.

not at all what youre thinking I bet, but it kicks ass and is super easy

large cast iron skillet preheated in oven to 450.

2 boxes jiffy cornbread mix follow directions (vary milk to desired thickness\moisture content)
1 can corn (creamed or plain)
1 tbsp sugar (less or none if using creamed corn)
    1 healthy pinch of salt
as many chopped up serrano or jalepeno peppers as you want

bake that for around what they say on the package, but it generally takes a bit longer due to the extra moisture from the corn

Be sure to bake it on an unglazed ceramic tile (<$1 at home depot) to get a nice crispy bottom. Great for pizza too.

There are so many recipes, techniques, etc. Go buy a comprehensive cook book and experiment. One hint...when baking you should be much more careful w/ measurements, times, etc. Ideally, get a kitchen scale and weigh flour and other ingredients...most newer recipes will have weights where appropriate.

    This is a good book:

in a town so small its hard to miss, but it is on main street, it a white building on a corner on the south side of main, be sure to get the bread they call jonny bread, it kicks so much ass

thanks for the advice, though i have yet to bake the bread, i have not had time with tuning skis for races and making up the school i have missed for skiing.

however i don't have school on Friday, so i should have time to do it Thursday night

And i eventually want to try making sourdough but i feel like i should get into he swing of baking breads using a simpler recipe

For lunch today, I had a little toasted bread, with some mayo, lettuce, tomato and, yes, bacon.

    It was good.

if you cant find tile large enough, you can substitute with a large terra cotta pot plate. you can get those at a plant nursery or some flower shops...maybe home depot has them now also since its spring.

i havent tried baking bread yet, but i really want to recreate ukranian bread. its like a dense, crusty sourdough dark rye bread. SOOOOOO good. i just cant find a recipe for it.

Its probably made like real pumpernickel; sourdough dark rye cooked in a cool oven over a long period of time.

American pumpernickel is a whole different deal.

i made two loaves today, they came out very mildly under cooked but it is pretty good, its an Amish bread, so its rather sweet.

    kneading takes for ever

at 8,000 feet in a dry climate, more water is needed

i look forward to making some kind of rye soon
