Only been there twice. Make the journey to Billy Bobs. As far as eating Kirby's is a great steak house. If you are up for an hour and a half drive the holiday Inn in Ardmore, OK has karoke on Wednesday night that gets the bar pretty crowded. Never been to the Stockyards but have heard there are many options there for whatever you want to do. It's not much but all I know about the wasteland.
Joe T. Garcia's in Ft Worth for some good mexican food.
I dunno about "Surfing" in FL - there's one spot that's good (Sebastian's Inlet,) and that usually only goes off about once a month. Honestly Hatteras has better surf IMHO, especially if you don't mind wearing a wetsuit.
That said - if you can't have fun partying in South Beach or Key West you are either dead or your dick fell off. Yes Austin may be "cooler" due to more outdoorsy activities, but it's semi-pro at best in the food & Drink comparison.
Supu all I can say is that bar none: Dallas is the place where I've had the most fun on corporate bottomless expense account fueled junkets.

I did a year in Dallas, it sucked. That said, go eat at Gloria's for tasty Salvadorian. There's also some great dive Jamacian places to eat. Hmmm. Jerked goat (<- Slooow pitch).
Now, for titty clubs. My favorite was Baby Dolls, my buddy swore it was a front for a whore house, but whatever. If you want to drop the $$$ The Lodge is the place to go, it's where Rodman spent alot of time when he was playing in Dallas. Don't get lured into the fully nude clubs, there isn't any client-dancer contact allowed, and they're BYOB with a high setup charge.
There used to be some cool clubs down in Deep Ellum, but I've heard the area has changed alot since I left.
