I think this comes down to details and math or an experiment. And seeing as how I once taught a course titled Physics for Pyros, I like experiments.
People have pretty much hit it. If it's packaged at altitude, or has a valve and taken to altitude, when you take it back to sea level it'll shrivel a bit. The major limiting factor will be that the beans will act as a support lattice. The vacuum isn't all that great (like most things, really good vacuums are expensive), so there's some air in there, but not much. My bet is you don't see much shrinkage because the space between the beans is mostly enough for the air.
Of course, if it's packaged at sea level and has no valve, you won't see change.
I'm so disappointed that the obvious Seinfeld shrinkage jokes were made before I read this thread.
