Ya gotta set the folder for iTunes to scan on startup in the preferences...or just manually add each new folder you download with your file sharing application. I think. I can't get iTunes to automatically add new files to the library.
I have mine set to automatically copy any song it plays or has added to its library to its own itunes music folder in the appropriate artist/album file....I go through and import everything in my limewire download folder every so often and then delete them all so I don't have a bunch of doubles on my harddrive.
Setting it to update automatically at startup kinda sucks if you have a decent amount of music since it takes forever to scan your whole music folder.
I just add each folder individually.

in 'advanced' under 'preferences' -- "keep itunes music library organized" and "copy files to itunes music folder when adding to library" are both checked. This way I import that limewire folder every so often and can then purge it.
I dunno what the automatically update thing is, but mine doesn't scan my 20 gigs of music at startup -- or it does it in a frickin blink of an eye.
upon further review, it looks like you probably aren't talking to me with the update automatically thing....
