    Corn vs Flour

    Tacos come in many varieties, most of which are far more than just good.

    Blurred's thread got me thinking: who the hell would want a soft corn tortilla? I have been in love with flour tortillas since I was old enough to eat South-of-the-Border food products, and the corn ones just never did it for me.

    Are you a corn man?

    over some mexican i was talking to the gf about this, and which one is more gringo is at all. The only thing I could come down to is that 80% of the time Ive had home made tortillas from like a neighbor or something, theyve always been corn. I do prefer the flour myself though, something about the corn just doesnt jive for me...I guess its like white\wheat bread, although I do like wheat.
    I was also thinking that in mexico they might have more corn as opposed to wheat just because it seems more versatile.
    It seems they save the flour for where its really important, ie sopapillas.

    Obviously corn. Not only do they taste better, but all the best authentic Mexican restaurants use corn tortillas. People are just scared of corn tortillas because they're slightly brittle and they require a little prep and a little finesse to get them right... Just like all the best things in life. Mmmm, corn tortillas.

    my family is from cuba and I grew up in florida amongst many crazy cubans.
    Ill take some ropa vieja, tostones with some mojo, and rice anyday over mexican.

    Soft corn for sure. Flour never did it for me, always seemed like the fake, processed, Americanized version of it. Although if the tacos are free/cheap and void of beef products, I don't care what about corn vs. flour.

    I enjoy both, but for what it is worth...

    - Corn is more authentic if we are talking about Mexican vs Tex-Mex. It has been around since ~10,000 BC. Flour was introduced by Europeans.
    - Corn is healthier.

    As long as they do sopapillas right anyways....Seems all the resturants up here in NV think sopapillas are cinnamin and sugar coated chips intstead of the warm, soft, bubbly doughy tortillas con honey yummmmmmmmmmm......droooooolll

    You use corn to make taco shells, and soft flour tortillas to make burritos, but if you are making taquitos, you have to use a corn shell. These are the rules of life and mexican food, submitted faithfully by soul skier, 11 june in the great year of two thousand and six.

    Carnitas motherfucker! the greasier the better - and preferably from a street corner stand on wheels!

    CORN - hands down. The way it was meant to be. Hell- 20 years ago they didn't even HAVE flour tortillas in Mexico!

    That said I'll admit that for burritos Flour is the way to go. Of course 20 years ago they didn't have burritos in Mexico either - thats a texan invention!

    Indeed. Can't stand those chips! The puffy hollow goodness with honey are the ONLY way to go! Due to some miracle my (non-Latino and very white bread meat-and-potatoes-traditional) mom learned how to make them right, spoiled me for the imitations ever since. Hmm. Gotta get that recipe and satisfy a craving.

    Corn, crispy or soft authentico..
    sopapillas- doughy,gooey and hot
    churros- crispy on the outside
    taquitos=corn. Flautas=flour.

    1.mexican 2. Italian 3. Thai
    after that it's all blurry but damn I do like a Cuban pork sandwich.
