Try seitan. If you've ever eaten mock duck at a Thai restaurant, that's it. Amazing stuff.

And don't bother with the idjit cadaver-eaters who lure you into the "if you decided to give up meat, why do you eat a vegetarian version of something that resembles meat so much?" argument.

    beans.

anyone know any good bean recipes?

i'm no hippy, but until i can grow and kill my own cow i ain't eating anymore red meat...and i can apparently only eat tuna once a week since there is mercury and carcinogens in it or something...and tofu is gross...and i walked into chipolte the other day and saw 80 chicken breasts on their grill and thought "how many chickens do they grill in this one chipolte every day? and how many chipoltes are there? and how miniscule is chipolte in the chicken market? and WHERE ARE ALL OF THESE CHICKENS COMING FROM!!!!!"

so now i guess i have to eat beans to get some good healthy eats and protein. beans aren't scary. maybe i should start a farm and feed chickens and cows beans...i bet they would taste good...and then they wouldn't be scary...

The key is to good beans is to add copious amounts of chopped bacon or other salted pork product.

Yeah, gonz, I'm growing a food freak-out thing, myself. Lotsa stuff grossing me out lately.

But, the beans: Ever see a bathroom in a bean field? Me neither. So where do the bean-pickers do their business?

    Sorry.

Easy chief, I was just saying is all. Everything tastes better with bacon-- you knew that.

Try black-eyed peas. You can shuck a big chunk of thick cut bacon in it and then pull it out right before serving. All the veggies in the hizzouse will be all like, "Damn, thas some FINE beans right theyah. Yessir, best damn veggie beans I ever did taste."

...and I won't tell if you don't. It'll be our little secret.

go to www.foodtv.com and type in "beans" in the search box.

Another good vegy resource, although you'll have to buy the books: http://www.moosewoodrestaurant.com/index.html

red beans and rice, very nice.....and people who eat this diet aren't obese and wheezing from their bad hearts.

The only problem with the "Moosewood Cookbook" and "The Enchanted Broccoli Forest" (both by the same people) is the lack of something I like to call FLAVOR! And no, more seasoning will NOT do the trick.

I'm with Pinner - Plant the Fatback. I have done it on occasion in the past to make a point to some self-righteous Vegans... not proud of myself.

And Gonzo, the bacon comes from here:

Not to freak you out more but some hunters I know are not eating the deer and elk that they shoot due to the fear of CWD which is a priron sp. ? based thing just like MAd Cow. I think the probability of bagging a deer with CWD in the eastern US would be much higher then gettting meat from a cow that had BSE.

PS thats my first post .

    Question

Can we talk about Scrapple next?

"But what parts of the hog go into the creation of scrapple? After the ham, bacon, chops and other cuts of meat are taken from the butchered pig - what remains are fixings for scrapple - including the meat scraped off the head. Scrapple may contain pork skin, pork heart, pork liver, pork tongue - even pork brains. Those faint of palate needn't venture any further."

Not to rain anyones parade, but you're ingesting as much crap from the veggies due to herbicides/pesticides/ground water contamination as you are with meat. You're chances of getting hit by a falling meteor are greater than your chances of getting sick from Mad Cow. If the chicken farms bother you, pony up the extra cash for free range. Basically, you've got far bigger things risking your health than what you eat, so throw a slab of meat on the bbq to go with the beans - you'll be fine.

    Wow you guys.

Listen: Humans are omnivores try eating a nice balanced diet including plant animal parts.

Don't kid yourselves either - the production of plants for consumption in this country is just as if not more industrialized than meat production and has huge environmental and social negatives that most people don't think about, it's hard to anthropomorphize (sp?) a bean plant, that doesn't mean you can feel like you're not hurting something when you eat em. Additionally, don't think a lot of animals didn't die to put some tofu on your plate cause a farm kills a LOT of animals every year just by its very operation. It is just as easy to eat good consience meat products as organic veggies (and truthfully they're comparably priced to their factory counterparts unlike organic plant matter).

Face it: keeping a human alive means killing stuff. The best you can hope for is to buy products from producers who care about the conditions of their product before harvest.

Also, if you are really serious about controling the food and the situation it was raised it, drive out to the country and find a farm/rancher raising pigs and cows in conditions YOU find acceptable, buy an animal from them and take it yourself to a meat processor. I guarantee that not only will you save yourself a lot of greenbacks but you'll feel "good" (after all isn't that what this is all about?) and have the best tasting meat ever to land on your table. Fear not, for a few extra ducats you can conduct the entire transaction without ever laying a hand on or even seeing poor piggie before he's wrapped in butcher's paper.

I just started hunting (birds) a couple of years ago and while you can feel better about where it comes from a) it is REALLY hard and b) it is way more elemental/primal and if you're squeamish about meat that's sitting in a package in a store I can assure you that cleaning a real animal that you just killed is WAY grodier. God forbid you nick an intestine while you're doing it too uke: Plus there's all kinds of wonderful stuff in animals you might happen to kill from lead/steel shot (great for kids bones and dentist bills) to rice breast parasites in ducks, tulemeria in rabbits and CWD (mad cow for deer & elk). And if you should happen to shoot an elk, you'll end up with perhaps a thousand POUNDS of DEAD thing on your hands and a limited amount of time to deal with it (yeay! 50 pounds of steaming bloody guts and shit!).

BTW- Chipotle was mentioned earlier, that's one of the few chains that actually goes out of its way to buy good consience foods. Good Times does it too (Coleman Beef).

Plus, meat and fat are flavor can't cook good without fat and butter baby.

Thanks to insights by PlayHarder, Gonzo will now be responding to his internet friends from a wireless hookup in a cave 16 meters below the earth's surface...aaaaahhhhhhh...safe at last!

Seriously, what the eff are you babbling about? Mad Cow has got to be like a runny nose compared to the revenge that montezuma will take on you and your beans-only diet.

You are letting the Mad Cow beat you. Keep the faith.
