For my B-day feast, a few local cooks decided to whip up a White Salmon feast. (“Will you still need me, will you still feed me …”)
King Salmon are supposed to be pink, but occasionally one has white meat. To the canneries, this is an aberration; to my people (Tlingat), a White Salmon is a delicacy. It has the best texture, the richest oils. If you really want to honor someone, you serve them White Salmon.
Like all good feast, the preparations begin in the early hours.
The feast itself starts with a salad …
… and progresses through the other condiments and preliminary courses …
