I sew a lot, and have a badass Pfaff walking foot machine and others. I make stuff from scratch, and I modify a lot of gear & clothing to better suit my needs. Bikepacking bags are especially fun to make and not too intricate. It's a fun hobby and can definitely open up all kinds of avenues to better gear.
I do, however, value my time at least a little. Making one of these packs by hand would take, conservatively, 20 hours, especially without having access to the (guessing) 10 different machines they use for various things, not to mention patterning it as a one-off. Add in the difficulty of acquiring these kinds of fabrics, foams, meshes, etc in small quantities, and $300 starts to seem like a bargain. The Vietnamese pack factories are modern-day marvels.
Anyway, I ordered one and look forward to trying it out. It's way larger than what I've been using for the last several years, so I'm hopeful that the compression will work well enough to deal with my typical 15L day-trip loads. Inevitably I'll end up sewing some stuff to customize it a bit.
