    Word on the street is that Mt. Rose Ski Tahoe has a $12 prime rib sandwich available at the lodge…

    So like I said, I worked for a sister dinner house in the L.A. area back in the day, with the same preparation of prime rib, fresh shredded horseradish included.

    To shred the horseradish, you got the big roots, peeled them, and then ran them through the big Hobart to shred them, a quarter sized hotel pan at a time. You had to shred the fuckers in off hours because it was literally like a tear gas cannister going off in the prep kitchen. Wearing a respirator and goggles was recommended.

    So after shredding, the horseradish looked just like a hotel pan full of shredded mozzarella. So of course we'd jump in any new cook in the kitchen by asking them to give the pan full of shredded mozzarella the sniff test because we though it smelled funny. FNG would always stick their face in there and take a big sniff and then their face would melt off like that nazi dude in Raiders of the Lost Ark. Hilarity always ensued.

    At this point in my life, I'd probably rather do HOPR than literally any steakhouse in the country. It's just so unique and so good at what it does.

    Unfortunately I don't think Fillmore Mosely-fest or whatever they called it is ever coming back. Feels out of touch with what SF is these days.

    Not the best in town, but not bad and definitely the cheapest.

    I had to go back and get the horseradish. Sauce and ground.
    Yea, the veggies were weak, but the potatoes were very good! A bottle of Cab for $30 and I was out the door for a hundy.
    Trouble was, we went across the street to Clark’s Seafood and got a couple of expresso martinis and desert. Which then led to more martinis at the Sterling.

    Mt. Bailey used to serve a 1/2 inch thick slab that covered a turkey platter.
    But that was circa 1995 when the aquarium festooned bar was mostly occupied by snowmobilers.

    Made a killer prime rib for Christmas. No skiing sadly. But the beef was so good.

    Ending up buying the book Defending Beef.
    It wasn’t for sale but the butcher is so nice he sold it to me.

    A dense read. But a good read. Highly recommended

    Grass fed beef could save the planet.
    Or at least the grasslands.

    that's 30 oz of pioneer prime rib in ketchum. No way i could take it all down but the scale of meat to to price you can't help but got all in. It's a sure bet.

    Diamond Lake Lodge at Mount Bailey Snowcats used to serve a ginormous slab of pr on a serving platter that drooped over the edges. No way could I finish one. But that was back in the late 80s and early 90s.

    Agreed. I haven't been back to HOPR since writing this, bc I no longer live 2 blocks away and am cheap and lazy.

    I think it's time for either a date night with the lady or a boys night out with the Kirkwood crew before the snow falls.

    Definitely not 5 miles from skiing, but any Sierra folk remember Lou LaBonte in Auburn? It was like a part of my soul died when that place closed. Before I was a full time ski bum that place was my last stop before getting into the mountains. $19 Prime Rib and a Seven/Seven on a Thursday night before getting back on the road. My wife, then girlfriend, would pass out and wake up at chain control or our driveway in Truckee. Pre kids... the simple life.

    Nowadays, Prime Rib comes off my smoker (horseradish/salt crusted with garlic cloves pushed inside) and the skiing is darned good behind my house if you're willing to walk for it.

    Truckee needs a good steakhouse, but I'm sure they'd fuck it up with $100 filets.

    Honorable mention... Old Range Steahouse in Tahoe Vista. Old school, my kind of place. Has to be close to 5 miles from Northstar if you hate yourself enough to ski there.
