I wouldn't go. Not for safety reasons but because of the hassle/uncertainty/restriction factor. Who knows what restaurants will be closed, what tests you'll have to be done, what rules you'll have to follow, etc. One risk is that you'll be stuck coming back if you test positive--currently required for reentry to US--even though positive test may not be significant in vaccinated people. When I go on a trip I want things to be as loosie goosey as possible. YMMV

Pffft, I hope the policy specifically states in bold font it covers for Covid, as we had a trip planned April 2020 and the policy specifically did not mention Covid when purchased in February 2020, nor anything that could have given John Hancock an out and they still declined our claim. For example, I scoped fares to Yurp for November a couple of months ago when they were quoting 1k+. Now they're down to earth around $600.

Used to be that buying 9 mo's in advance got you the best deals. I scored $360ish tickets to Spain in Feb 2020 by buying in May 2019. That was about half price at the time. And I bought those long before anyone had even heard of COVID-19.
There are some smokin deals in coach (if your not traveling with my princess) to Yurp September through December now.
