Okay - Order's in, s/b done the end of the month....

hitch, I'll be out of the country for much of the time around when it should get done but will be back shortly, the 1st week in sept. Might have the wife go pick it up or send somebody else. Otherwise, might have to wait till the end(ish) of Sept. We'll figure something out. I'll try to call em before leaving and get things straightened out. Foggy- We'll have plenty-o-space to temp hold your portion till you get back from SA.

Order:
Pork Chops: 4/package 1 1/4" thick
Shoulder: 1/2 = 3# roasts, 1/2 = country style's (1 1/2#/per)
Bacon = 1# packages
Hams = Roasts: 1/2 of which will be cured (5#s ea), 1/2 fresh (5#ea)
Ham Hocks = Smoked
Sausage = Italian/German (70/30)
Fat = Yes
Liver = Yes
Feet = Yes

Gonna try and con the wife into some soviet style soul food cookin (haladetz = pork jello)

bizzump. will try to call this week before leaving das country for a while to check on the slaughterhouse's progress. That said in the mail today came this certificate of appreciation from young Travis Duncan our pig's former owner.

Just talked to DTL, should be done the last week in Aug, of course when I'll be out of the country, and I doubt I'll be coherent enough the few days I'm back before leaving again to deal with this so will probably wait till the middle part of Sept. to go get it.
