Man y'all really perseverate a shit ton over what amounts to a $300 decision...
Buy both and sell the one you don't like. The resale, especially on the DW104 is high cause everyone wants to try them. Mount with demo binders and fuck with the mount point (don't tell @Melee I told you that). You fuck up, I'll buy them from you for my kids or myself if they're 190s (or @meter-man will).
That said, DWs and WCs ski short, resort go longer, touring go shorter, 50/50 see above.

We’ll because this is TGR, ask anyone of the long standing members to pay more that 1/3 of retail and it’s like you literally shat in their Cheerios

I knew the Jeffrey's were short for me when I bought them but it was a killer deal. At this point I'm deciding between 179 and 184 for the DW104 and DWT.

Couple things I'm going back and forth on:
    - With the DW104 being slightly heavier/stiffer than the normal DW, should I be more conservative and go with 179?
    - If the DWT are going to be my only touring ski, is 179 worth it for the maneuverability or 184 for the stability?
    - Is 5cm of extra length on the DWT really going to make that much of a difference with kick turns or skiing down more narrow chutes/couloirs?

I know a lot of this depends on skiing style and preference but just looking for opinions and firsthand experience.
Can't comment on DW104 vs DW but I like a shorter touring ski for a number of reasons: when I'm touring I do more turns and less haul ass (vs resort), they're lighter, easier for kickturns, and easier to maneuver in tight couloirs. Due to these reasons I like a touring ski 5-8cm shorter than my resort ski. If you like the anima length, if I were you I'd go 179 DWT and 184 DW104, that's my 2 cents but I'm not you and like you said it largely comes down to skier preference.

I'd go 184 for both. Full tail rocker, full tip rocker and forward mount point (mount em on the line w/ triple camber) means DW and DW104 ski pretty short.

I am 2 inches taller and 30 pounds heavier than you and ski the 190 in DW, DW 104 and DWT. Very glad to have them longer- it gives better float in pow (on DW and DWT) and more stability at speed (an important consideration for me on DW 104 given the low tide/ corn purpose of that ski for me).

The DW 104 is the stiffest of the three, but it is still pretty light and easy to swing around. They've never felt too long. They pivot into and out of tight spots.

Most of my touring is on pow (open or tight terrain) or if it isn't pow I'm usually in open terrain. I want float and stability out of the DWT. I value both of those aspects over maneuverability in the DWT and DW, mainly because they are such a maneuverable ski. I've never skied anything that is more maneuverable for their length than the DW series.

TLDR- if I was your size I'd go 184 in both.

Planning to take my dw104s in for a pre-season tuneup, is there anything special about tuning the triple camber I should mention when dropping them off?

I'm mostly illiterate, so thanks for teaching me a new word that I'll be using on my FOG acquaintances. It will come in handy and I know I'll be needing it often

Yes, but I have the luxury of strolling over to the Moment factory and trying before I buy... YMMV.
Also, no hole conflict on resale if you don't like them.
AND, when you have 3 kids it's just a good $$$ decision, i.e. more $$$ for beer.

Not saying the weed isn't assisting my perspective, and I'm not normally much for top sheets, but fuck those look rad. Enjoy BC, and well done Moment.
Colours are reminiscent of Commander 118s, which makes me think of nothing but good times in deep snow. My 188s ski long, have great edge hold in steeps, love the fall line, and charge pow. Probably not the ski for low angle or slow speeds (they're very much straight stiff variable conditions chargers and sink when not treated with aggression), but man they rule at going everywhere fast in soft and/or deep snow. Keep yer head up on cat tracks, almost knocked myself out skating down 7th road when already at terminal velocity after watching the Rendezvous board flip from red to green after a two day storm (they're precise in firm but clearly operator error), and once I convinced myself not to download ('who is this lady standing over me asking if I'm alright?', 'why am I down here?', 'pow is soft, it'll be ok'), I uploaded and managed to get white roomed in Bushrat next lap, which was the turn of the year. And maybe I'm a wuss, but I haven't been able to bend em and commit to a proper turn on the groom. Don't care though. Alpine dopamine sticks. Thanks Moment.
90 plus cennies in the 6 day in Whistler. American Thanksgiving(er) can't come soon enough.

As do I, I just force myself to make difficult and expensive decisions blind. Yes, I am retarded.

Now who wants to buy a pair of 2020 commander 108s at 194cm in excellent condition?
