    For jerky, you want the leanest cheap cut you can get and don't skimp on trimming exterior fat. The fat will go rancid and gross quickly, no bueno. Slice across the grain. No lie, the best jerky I ever made used beef heart.

    King Soopers in Boulder has been running a buy-one-get-one-free on pork loin chops the last few weeks. They're super lean and would be easy to slice into jerky size, seems like a good fit for this project.

    Lamb loin chops, w/ salt, pepper, OO, garlic and rosemary. Usually throw some lemon zest in too.

    Char both sides, turn vertical on the bone and finish off the heat



    Update... damn medium rare goodness. Garlic farts tomorrow!

    -6ish cups broccoli florets. Didn't measure this, just filled the processor bowl maybe a bit over halfway.
    -1/2 white onion, coarse chopped
    -4 cloves garlic, coarse chopped
    -2 eggs
    -1/4 cup cornstarch
    -1/4 cup rice flour (AP flour would probably work fine)
    -1/2 tsp kosher salt
    -Several grinds of black pepper

    I pulsed the florets, onion and garlic until it had all broken down to a coarse meal. Added the eggs, flour/cornstarch, S&P and pulsed until thoroughly mixed. I was a little worried that "batter" was too thin at first, but it was perfect. Spooned ~4" rounds of batter into a pan on med-high heat, waited until you could see a little brown around the edges and they appeared to be starting to set (4-5 minutes), flipped and finished the other side (2-3 minutes) just like pancakes. Kept the cake diameter smaller than the width of the spatula and they were easy to flip. Non-stick cookware or very well seasoned cast iron/carbon steel highly recommended.
