    Braised lamb in the Dutch oven.



    Jerky on tap for daytime snacking.



    Going to butcher an elk tomorrow for a friend, and I've got about 15 lbs. of sausage on tap ready to make.

    Definitely not summer fare.

    Pork tenderloin with veg and bread. Simple but so satisfying! And particularly nice when paired with a beautiful 07 Cotes du Rhone that was lingering in my cellar.

    Just got back from a backcountry hut trip (Peter Estin Hut near Eagle, CO), where one dinner team hiked in a raw turkey and various accouterments for 5 miles and 2200 feet of elevation gain, and used the wood-fired oven at the hut to roast the turkey and make a full Thanksgiving dinner (with gravy, potatoes, stuffing, green bean casserole, and dinner rolls). Outstanding work.

    (Edit: dang, no idea why the pic is upside down - it was rightside up on my computer. Oh well.)
