checked out Hana ramen on the way back from the ski jouring event in heber - what can i say? stb mrs tgapp thought it was better than koyote; I disagreed but only by the slimmest of margins. easily one of my most delicious and memorable food experiences in Utah, and extremely well worth the 55 minute drive for us. absolute highest recommendation, and the fact that koyote was a 1.5 hour wait on a tuesday and we walked in to a place at the bar on a Friday was just superb. i would have gladly waited for a chance to eat here, it was so fucking good.
we had: chashu bowl (un fucking real, the combination of Japanese mayo and chashu and green scallions was just to die for), shishito peppers (piping hot and covered in bonito flakes, amazing), black garlic oil ramen (the egg was life changing), and tofu curry (remarkable).
if koyote ramen is like a lemon chiffon cake - light, airy, nuanced, bright, then the black garlic oil ramen at Hana was like the double chocolate cake of ramen; rich, heavy, satisfying, with an egg that was completely life changing. put another way: i would wear magic underwear and join a cult if it meant that i could eat that egg regularly.
it's hard for me not to gush about this place. the problem is that - except for koyote (and maybe Hanamaru in Ogden - I'll do a full write up of that later) - ramen now feels totally ruined for me, at least in SLC.
