How long can shit last in the fridge?

A bit off topic, but every fucking time I am at my parent's house I have to be ever vigilant with checking expiration dates on food in their Kitchen/Pantry- I constantly come accross shit that is 1 yr+ past its govt. issued drop-dead date.

I feel like this may be common, anyone else?

1+ year? That's nothing. I cleaned out my parents kitchen cabinets a year or so back and was pulling shit off the shelf that had price tags, i.e. stuff purchased prior to the existence of upc codes.

Years ago we had this whole discussion here on that. Armchair Extreme, a high-level chef and big deal in the restaurant world in general, said that it does not. Said if you get poisoned at the picnic, it wasn't the mayo. Was quite adamant about it.

Homemade mayo definitely will go bad and won't last too long in the fridge. Commercial mayo is all pasteurized so that stuff will last a loooong time, no idea how long though. I imagine it's pretty easy to tell if Mayo is bad by the small alone?

Vinegar will go bad if left long enough. 'course I never refrigerate vinegar. Maybe it wouldn't if it was in the fridge?

I think the enemy is oxidation. Sealed container in a cool location is the info I was given many moons ago.

General rule: if it smells funny, looks funny (e.g. odd colors), feels funny (texture changes), or is growing something, throw it away. Otherwise, you're pretty unlikely to get sick from something that by all appearances is normal.

My father in-law gave me a coke last year . I open it and take a sip . It tastes like crap . I look at the can and it's from the last time the redskins won the superbowl .

my parents are really old and i learned the hard way that when i visit to check the expiration dates on everything before i eat it. it may not make you sick but it stale shit tastes...like shit. how cheap are you that you really need to hold on to a couple bottles of condiments and such?
