I got some k2 coombas and a 110mm skin. the ski dimension is 133 /102 /121.
Do i need to get bigger 130 or 140mm skins? its an easy exchange.

you'll probably be fine with the 110s... but if it's an "easy exchange" you may as well get the 125s.
110 will be fine
No issues with the shovel not gripping or snow building up under the skin?
I wouldn't worry about it at all. As long as there is solid grip underneath your foot you won't have problems. I've used skins that were way to narrow in a pinch and as long as your not skinning strait up ice they were fine.
I would go closer to 120 or a little wider than that. I like almost full coverage at the tail for the skin tracks we have in Tahoe.
if it is an "easy exchange" then do it and get wall to wall carpet
110s will be ok, but I would get the 120s if I could.

you'll be fine with 110

It would probably work if you were stuck with them but if its an easy exchange I would do it ... one of these days you will wish you got the 130's
Thanks for the input mags, im getting the 130s today, hopefully heavy snow will follow suit.
