In city:
U district: Blue Moon, UW art museums.
Downtown: Lusty Lady, New library, ride a ferry to Brainbinge and back, Public Market for wandering drinks and food, Pioneer Square (lotrs of urine stained alley's, bums and some decent architecture). Too many good restaurants to name, but try Place Pigalle (Public Market), Maximiliens (Public Market). Pike Place Brewer (Public Market).
Capitol Hill: Elysian Brewpub.
Fremont: has a lot of bars and restaurants. Triangle Tav used to be good. Up the hill out of Fremont is the Buckaroo, a classic NW tavern.
Ballard: The Tractor Tavern, nice old architecture without downtown hustle.
Within an hour: Snoqualmie Pass/I-90. Tons of hikes, try Denny Creek or go up to check out Alpental. Can go a bit further to get to Lake Easton and Cle Ellum. Also, Salish Lodge and Snoqualmie Falls is a good stop. The restaurant is ridiculously expensive, but the Attic bar has really good food too and a view of a waterfall than cannot be beat.
Within 2 hours: Mt. Rainier is worth a visit, check that Sunrise is open. Also Mt. Loop Hiway up out of Granite Falls through Verlot, Mt. Pilchuck, Lake 22, permanent snowfield at Big Four, Barlow Pass, all great hiking, fantasic views.
