    freezing is fine, it doesn't hurt a thing really.

    home roasting isn't hard, but thinking you can roast at home for cheap is as foolish as thinking you can do espresso at home for cheap. you do save a ton on coffee though, so that's nice

    Haven't checked this thread in a while. So much killer advice.

    One thing I'd add on the channeling issue is that my biggest culprit is my shitty roaster (behmor 1600). Great bang for buck but if it's taking me almost 20 minutes to hear the first snap of 2nd crack, I think I'm baking more than roasting. I almost never have a channeling issue with pro roasted beans, and the pucks pop out nice and clean. With my beans, I tend to get a fragmented puck.

    Separate topic for those on edge of rabbit hole, here's one more angle. My most wanted feature when beginning this journey was direct plumb. Machines that have it aren't cheap, but to me, it is the single greatest thing that's happened on my coffee adventure. I didn't care about refilling a reservoir, but messing around with descaling and related reliability issues was the motivation.

    Well, this device costs less than 200 bucks, and then, of course, there is the literal world of beans, and, as someone said, it isn't cheaper than store bought, but not much more per shot and much much fresher. Doesnt seem too hard. Messy and smelly, but, I could get the hang of it.
    How long do home roasted beans stay "fresh" in a sealed container, but not frozen? So, how much do you roast ahead? A week? Two weeks?

    I roast every 14 to 18 days. Days one through five are for cupping and brewed coffee, starting on day five I'll start to pull espresso shots, and that will usually last until day 11 or 12. Most of the time I run out of espresso before it goes bad, but sometime around day 14 is when the juice isn't worth the squeeze. I almost always have freezer coffee for emergencies when life catches up and I'm not able to roast on the day when I need to roast.

    Yeah, honestly, if it is taking you that long to get to second crack, you are baking the hell out of your coffee. You should be hitting first crack somewhere around 8 minutes to 11 minutes, and then second crack between 11 minutes and 14 minutes at the very longest. Honestly though this is all highly speculative because I never roast to second crack, all my espresso gets dumped around a minute and a half after first crack. I would think about lowering your batch size.

    Depends on the beans. In theory I’d like my African dry process beans off gas for 5-7 days. In practice I’m lazy and I always seem to drink them within 2-3 days.

    Yes sir. Should have specified that's for 1lb batch. I can hit 2nd crack in 14 min with a half lb. Just lazy (prefer to roast every other week as opposed to weekly).

    Smaller batch coffee is definitely better though.

    Been hunting for a machine for a while and this popped up locally, well cared for and tons of accessories. So now I’m drinking a ton of espresso.

    I definitely overestimated my skills. Initial shots were totally sour, and hard to find the spot between sour and bitter. Started messing with temperature, dose size, and then got totally sideways.

    Initially was playing with some IMS baskets and went to the stock ones and things improved. Now I feel like I’m getting there and will pull a shot that is incredible. The rest I’ll just turn into a milk drink.

    ahh damn yeah that is a good looking e61. what is it? HX or double boiler?

    I fucking love e61s with the manual brew valve. It's so satisfying to open the valve to pull a shot.

    damn that's legit, you won't ever need a new machine. that'll last your entire life.

    once you master that i would think about adding flow control to it, for $150, it's a stupid good upgrade. then you'll be able to do all sorts of really cool shit.

    on another note, does anyone have an e61 with knob control for steam and hot water (not joysticks, like cantdog) that would like some really amazing bubinga burl brew control knobs? these were well over $100 custom, and they're stunning. they look like well-pulled shots of espresso. plus, you pretty much can't get them in this wood anymore, it's too rare

    the knobs are a friction fit designed to go over a square post that is ~6mm, and the brew lever screws on for about the same. i'll send em to any mag for the cost of a $whatever donation to your local foodbank, they're fucking sweet, they just don't fit my machine

    Not as a daily driver but yes , I have used one a ton. They're amazing. Super easy to dial in shots, that deep basket makes it way less likely to channel.

    Yeah the flair is fucking excellent. The only limitation it has is shot volume; it excels at ristrettos and dopios but can't do much longer shots. Make sure to preheat the group head thoroughly, and don't be afraid to pull long, slow, shots with it.

    also yeah shoot for like 14-16 grams or so, with a grind that is just a touch coarser than normal espresso (still quite fine though). you should be able to pull a shot with some resistance without it feeling like it's arm day at the gym
