    Fish Taco Help Please

    So we are having a casual dinner party @ my crib for a friends b-day.

    when i was in college, I used to go to killer parties where people made fish tacos.
    easy semi cheap & fun.

    but now the party is today & I realize that although I ate 1,000's of these things up & doown the SoCal & Baja coast I have never made them.

    so I was gonna do a simple beer batter, cut up the fish & fry it serve with cabbage & a white sauce & of course limes
    soft corn tortillas heated.

    any other suggestions?

    gonna use whatever fish is @ CostCo right now

    Erm. Is that a wise or necessary idea? An ice bath, OK ~ but 24hrs at room tempreature? I'm thinking you might want to just let it sit in the fridge overnight..

    Fish at Costco will probably be the halibut or catfish. So what you said sounds good for these fish. You could also pick up some salmon. A good fish taco for salmon is grilled salmon, aspargaus, white onions, and some of that real salty mexican cheese (cotejas?). Add hot sauce to taste and maybe some guac and you got something there.

    never been to rubios.

    only real fish toco experience is people's house & little stands.

    stands always had a fryer.

    gf wants to rub it & bake it cuz its a mostly female party ( slooow pitch) but i dunno

    not doing salmon. et too much of it this summer & ever since the salmon Lumpy brought down last fall from his boat no salmon tastes good

    Go with the Halibut or the “Endangered” Chilean Sea Bass

    Catfish is smelly

    Don’t forget the Lime, Cilantro and grated Jicama. (cabbage sub)
    A magnum of Pinot Gregio, and Case of Corona Extra is a must

    Halibut is an excellent choice. Baja white sauce is usually just watered down mayo. Doing a crema would be better. For something a little more cultured and a little less traditional, try avacado mayo instead of guac, or try a mix of sour cream, mayo, a little lime, dill and capers (my own recipe).

    not catfish.
    cilantro is out as are onions cuz nic hates it

    no Pinot Grigio but 2 magnums of Moet White Star & at least a case of corona & a bottle of repasado. girl whos b-day it is is a bartender so you can imagine the crowd

    Did you like the fish tacos we had at our place that night? It's Rio Grande's recipe. Broiled. We did it with Halibut from Costco.

    Lemmie know and I'll hunt down the recipe.

    yeah you were part of the inspiration & Nic wants it that way but based on Lemon boys 10 pillars of eating, frying seems better

    cant hurt

    they sell Manatee to grill around here?

    I don't know if it's been said, but you need fresh cilantro. gotta be fresh.

    If you're ever in Heber and want some great fish tacos, the good stuff can be found at Tony's. Right hand side of the road about half way through town if you're headed from PC to wherever the other side of Heber takes you.
