    I found the holy grail of gluten free pizza today. I had the idea to make the Caputo Fioreglut focaccia recipe, put the dough in cast iron skillets, then top and cook per the Serious Eats pan pizza recipe. Exceeded all expectations, the best pizza experience I've had in over 10 years. Unqualifiedly awesome, not just by gluten free standards.

    My youngest wanted to try making pizza dough over the summer. Now homemade dough is the standard, and standards are pretty high.

    Thanks! I took on woodworking as my pandemic hobby and made the original two years back. Now I've made three for pizza inclined friends and family. Peel #1 is the original prototype when it was new. The red paduk as greyed out over 2 years. Peel #2 went to dad after he saw mine and was envious, and I saw the beater of a peel he was using. Peel #3 was a wedding gift and all oiled up in the photo there. That one is a bit skinner than the other two at 14" wide or so. The other two can take 18" monsters

    The camera is deceiving, they're all made for XL pies. I wish I had a photo of all 3 in the same place to compare them. They're all about the same overall length ~36" but they got progressively smaller because I built them for someone feeding a family, not personal pizzas. #1 is an absolute unit at 16.5" wide x 19" long and that's why the handle looks shorter. #2 is about the same but he's holding it at an angle so it looks more rectangular than it really is. #3 is the baby sized one at 14" wide x 17"ish long because the bride currently lives in an apartment and her oven is small. It's sitting on a 13x17 oven sheet for reference.

    If I retire early, I might try and sell custom peels for beer money.

    I love the custom peel that my fil made me a bunch of years ago. Use that sucker all the time, but never for pizzas cuz the ooni cooks so hot that the wooden peel begins to smoke the instant it touches the stones. So I had to buy a cheap stainless one for actual pizza making.

    Anyone used the Solo Stove Pi Prime gas oven? Do you like it?

    Been using the baking steel for 7 years and it works great, but for 3 pies it takes about 10 minutes each, so my family can’t all eat at the same time.
