I made the mistake of buying The Pizza Bible. Damn you Tony Gemignani.
I received the Ooni 3 Oven for Xmas. Just did the first run of 6 pies and results were good. First one was a little overdone, and the last one the best. Learned that it really is a two person process unless you time everything right. It’s interesting cooking in a 900 degree oven.
I’m assuming you’ve got the gas add-on?

I have the same oven, and realized that the hopper that comes with it is way too small for anything other than a pizza or two. A quick trip to the hardware store, and $15 later, I have a hopper that got us through 15 pizzas straight. And bonus points for a bit of a white trash fix.

When you make your own vs buying: Toppings on top (duh the name) vs under the cheese? Some toppings are better on top? Some better under the cheese?
Discussed this the other day. I like pepperoni on top, but my favorite pizza place puts pepperoni under the cheese. I don't get it, but yet it is so damn good, I can't complain.

Got my dough out of the fridge and warming up while I drink coffee.

I think I made my best homemade pizza yet on Saturday. Homemade sourdough crust was nice and airy and just the right balance between soft and chewy. Topped with red sauce, mozzarella, TJ's quattro formaggio mix, sausage, red onion, mushroom, black olives, cherry tomatoes and a little parmigiano reggiano to finish.
Pretty happy with the results I get with a 1/2" steel plate.
