I've heard "spring mud season" and "fall mud season"
or "shoulder" instead of "mud"

It is semantics and we all know what someone means with the term, but yeah, mud season as a term originates because of melting snow in the spring. There is no fall mud season.
Terms like off-season or shoulder season may be better suited for late fall.
