I've always liked the look but not entirely sure of the practicality compared to a drop or undermount re: water spillage around the vessel and keeping things clean easily. Anyone?

vessel sinks are for folks who can (and want to) keep their bath rooms clean, usually with someone employed to keep them that way
nothing different about their utility tho
just usually require more cleaning effort since the exterior of the bowl is exposed...and usually with a tight inner corner to reach into to clean
i'd say they are a little easier to use for adults since they sit up above the counter
don't like the one in the OP, tho...and totally unmatched with the faucet
If I'm spending more money than I would for surface mount, I'm getting an under mount. Easier to clean.

The first time I stayed at the Royal Suite at the Hôtel Plaza Athénée in Paris, I was astonished to find it had undermount sinks. For $25K a night I expected vessel sinks and told them such. Upon my next visit to the hotel, they had replaced the pedestrian undermount sinks with vessel sinks made from the finest Carrara marble.

If you have a limited amount of vanity space the right kind of vessel sink is awesome - you can end up with more room to put shit on the countertop.
