I’ve heard if you use beer instead of water you can get good results
Doesn't alcohol retard some of the gluten formation? There's something like that I'm pretty sure
sourdough is supposedly better bread for glutards anyway
maybe beer sourdough is even betterer

KQ - Can you make gluten free sourdough?
Being a glutard and a bread freak is a dangerous balancing act for me.
Sourdough is supposedly better for glutards. If you let it rise a few times, you reduce the gluten with each rise.

Well, an unmotivated Friday afternoon but a conf call scheduled for 3:30, resulting in me reading the whole damned thread this afternoon, and I'm in.
I've baked for a few years, but haven't given sourdough a whirl yet, but, thanks largely to KQ's pimpin', I just ordered the KA starter set. It's hot and humid here about 5 months a year, so I'm holding off on the proofamajigger for the time being.

by the way, I didn't see any mention of the book that got me started--Flour, Salt, Water and Yeast. All recipes are designed for baking in a cast iron dutch oven.

My wife's been having fun with sourdough for a while now. My favorite is when she uses butterfly pea flower and makes it blue.

The bread does look tasty though.
After too long of a hiatus, finally got a starter going again and then did something with it. A browner crust would've been nice, but for the first effort in about a year, I'm happy with it.
