From what I’ve seen, Subaru’s 2.5 engine can get the job done, but if you’re regularly going to be on highways or passing on those two-lane roads, going for something with a bit more power, like the 2.0XT or 3.6, could give you more confidence.

IMHO, Subaru earned its reputation as a winter car based on the performance of the manual transmission. The automatics can suck on long steep climbs that put you right on the shift point between 2nd and 3rd. You're constantly redlining and lagging and the fucking car can't make up its mind. Worse still, the automatic engine brake is almost worthless on the downhill side. If you lock it in 1st, the car rolls less than 15mph, too slow for all but worst conditions. If you lock it in 2nd, however, the gearing allows the car to descend at 50-60mph! The manual 2nd keeps the speed manageable around 25-30mph.
