Usually feed my starter 2 days before making dough, this way it is ripe and active. Dough gets mixed in the morning and proofs 8-10hrs at room temp, shaped into portions then put in the cooler for 48-72hrs to ferment.
This one was cooked in an oven @ 525F 12 minutes.

Kneading dough just got easier. Not a big fan of Ooni’s recipe. It’s not that different than the one I’ve been using (from King Arthur’s 00 pizza flour label), but the Ooni crust lacks the depth of flavor I usually get from the KA recipe/proofing.

Had to return the first defective unit, and Target took some convincing to apply the pre-black Friday deal on its replacement, but obsessed over this purchase no less than any other gear purchase.
Seemed to have the best power/features for the most reasonable price ($219.00 for 525w). I was expecting closer to $500, so probably need to buy some accessories with the difference.
The color was wifey’s choice, and one of the few that was/is available anyway. Of course you can spend double if you want to, but pretty sure this thing will be more than adequate for my application, and just in time for Christmas cookie season!

I love my KA, my gf for some reason won’t use it, prefers to do everything by hand. It’s the only way I’ll make pizza dough.

I married into our KA, my wife got it when her Grandma died when she was in college. We’re pretty sure it’s at least 40 years old.
The thing is a tank, we put a bag with three cookies in every vehicle we work on, we’ve been in business for 15+ years. I can’t imagine how many batches of cookies that thing has mixed.
As to the thread topic, I use it for every dough I make. Bout 11 minutes of second speed once all the ingredients are introduced. Few hours on the countertop followed by some time in the fridge.

The attachments work. But the stand alone stuff is better. I upgraded from a KA pasta maker and KA meat grinder to a hand crank pasta maker and a counter top meat grinder…Quote:

Those rectangles of pizza were one of the highlights of my childhood. I love my Ooni and some high heat Neapolitan pizza, but god damn those floppy rectangles of pizza bring back some membaberries.
I was a few years out of high school when the dealership I worked at put in vending machine in our break room. This was in the mid eighties, food vending machines were pretty new. It had some nasty ass prepackaged sandwiches, burritos, and holy fucking shit lunch lady pizza!
I hit that thing every lunch, reveling in the rectangle floppy crust goodness. Thankfully they had the sausage version of the geometrically astute “pie.” The day that machine was removed (cost/benefit) was a sad day in my life. It was a link back to the times I’d smile as a child, I still smile, but not like that.
