Cat Jockey, to answer your question, I have tried to replace a portion of an edge on a ski, maybe around 30-40% not the entire thing. It was tedious job, and lasted about two days once I took them out on the hill.
I can't imagine it working too well with the whole edge, but to answer your question, yes it can be done.
Try it, see what happens, the worse thing that will happen is you wasted your time and money, and made yourself look like a tool on a message board.
