Wow, that is the leanest looking piece of corned beef I've seen I'm good for once a year because it's usually fatty, but then looks like a once/week kind.

There is still a fair amount of fat. The sous vide method gives it a very firm structure. Lot of the fat melted off and filled the bag, it stayed super moist as a result.Quote:

Azalea, correct. Same family as Rhodies, of course. This poor little guy really got smushed when we got all the snow last February, but he's come back nicely in the last year.
