I'd hit that.
I had an elk backstrap thawed out and ready to cook last night, but while I was on my MTB ride all I could think about was tacos. Too lazy to go the store I scrounged up what I could find: onions, jalapenos, tomatillos, lime, crumbly cheese, corn tortillas, and of course the meat. Turned out pretty good.
