My parent's keep their cheese out on the counter, it never goes in the fridge. It's covered with a mesh dome to prevent any flying critter from going in, and their house rarely gets any hotter than mid60s, but the stuff happily lives in the open and stays delicious. Probably ages a bit faster than if it were kept cold but cheese has an incredibly short lifespan over there and gets consumed FAST. They will put really soft stuff in the fridge on occasion but it's mostly to keep it from getting extra runny and escaping the container.
That being said, better safe than sorry with food, and if your head says no your gut is not going to be very excited. No shame in treating the dog with the lasagna.
