You'd probably want to do PCH one way, but not the other -- takes too long. The other way, you'll want to do 101 past Gilroy, to 156.

i would say go down to monterey early in the morning, then take the 1 back up through santa cruz, stop however long suits you, and then take either hwy 1 or hwy 9 back to the Stanford area. hwy 1 is beautiful coast driving, hwy 9 is beautiful northern california forest driving.
as far as the town and country shopping center (hobees/jamba juice/etc) it's the very first place you will see when you driving from the pool out to el camino real. you could actually walk there from the pool in about 5 minutes.
one last recommendation, if you have some time between prelims and finals, check out hoover tower on campus. it's really easy to find, it's the giant tower you can see from almost anywhere on campus. on a clear day, you can see all the way to san fransicso, and stanford campus is beautiful too. enjoy, and goodluck at the meet!

If traffic is heavy on Hwy. 17, definitely take 101 at least one way. I'd skip Cannery Row (it's a tourist trap) and spend more time at the Aquarium. You could also visit Asilomar State Beach. A little further south, Pt. Lobos State Park and China Cove Beach are lovely.
I doubt you'll really have time to go to Nepenthe and Big Sur, but it's a great area. Nepenthe offers vegetarian selections, which your wife might enjoy.
After exploring the area by Monterey, you probably won't have time to visit Santa Cruz. If you do decide to go there, you might enjoy Natural Bridges State Beach at the north end of West Cliff Drive.

If you are in Monterey area during dinner time, I would strongly suggest hitting Robotas located in the Barnyard in Carmel Valley. Best sushi I have ever had. There is also Billy Bahamas and Bixby's. Both in the Barnyard and fantastic food. When I go home, I usually go to Baha Cantina located further down Carmel Valley Road. Great atmosphere and rather potent drinks.
If you do the drive on 17 Mile, stop by The Tap room for a drink at the Pebble Beach Lodge and if the timing is right try the Chocolate Souffle in the restaurant downstairs (Club 19). If you really want to treat yourself and wife, go to the Spa at Spanish Bay, also in Pebble Beach.

I grew up near Monterey-Salinas...
Then I must enture vorth to see the childhood playgrounds of an icon.
Went to Passionfish--ditto on the recommendation! Did the bike rental on 17 mile drive too. was really cool. Could also drive down to Big Sur and go to Nepenthe--amazing place! Carmel is also amazing if you want to just hang out and shop and loaf around. Of all this--I would say drive 17-mile drive and go all the way to big sur and nepenthe.
edit - duh, should have looked at the date! but, big sur, nepenthe and pheiffer state beach at sunset. That is a super romantic day!

Westside. Bonny Doon Tasting Room. Cellar Door. On Swift. Near a brew pub and French bakery. Good food ($$$+) and wine.

David Bruce in the SC mountains. There are actually plenty of good wineries up there.
Oswalds ($$$) is the best food downtown. Gabriellas ($$$) is decent but not as good as in years past. Zoccolis ($) has great sammies. Chocolate ($$) is near the bookstore, and is okay if you (or a lady) really like chocolate. 99 Bottles ($$) pub food with lots on tap. Walnut Cafe ($$) for brunch or Zachery's ($$) for bigger brunch. Jack's ($) for burgers.
Taco Morenos ($) on Soquel. Taqueria Cabana($) on Mission. Vallarta ($) downtown or on Mission - bigger, but not better
West Cliff Drive. Natural Bridges SP. Plenty of beach walks. It's by the Lighthouse. Seabright (SB Brewery ($$) on local Tuesday's night is good) Beach, by the rivermouth. Twin Lakes Beach by the harbor. Some like Capitola. Not sure why. Cute touristy seaside village thing I guess.
In Moss Landing there is The Whole Enchilada ($$) on Route 1. Good food, great Margaritas. Stop by a produce stand somewhere down there. Cheap good produce.
Monterey
Aquarium of course. Decent restaurant ($$$) inside. Don't do the grab and go place. Sit. Great view of the Bay.
Drive out from Monterey toward Pacific Grove around the front of the peninsula.
I have friends who like Stokes($$$) downtown.
Carmel Beach is a great sandy cove walk. Especially at low tide in the morning with coffee.
Good uphill hike with a view just inland (and perhaps a few miles north or south) of Garapata (which is a killer beach). If there is no fog, hit this up. You basically head straight up a ridge and get 800' or so above the water.
For a mellow hike, head out to Big Sur River Mouth. Mossis(?) SP.
OK hot Springs 12 miles in from Big Sur - main SP. Usually an overnight thing.
Big Sur is okay in moderate fog, but on super foggy days, there may be no view at all.

Pleasure point is amazing. Capitola is also a touristy fun little town. Go watch people surf Steamer Lane out on the westside.

rent wetsuits and surfboards in Santa cruz and surf Cowell's beach view steamers lane surfing from the bluff and check out the surf museum in the lighthouse right there. At the MB aquarium say hello to Joy and Tula (they were the otters when I was there in April)
