Ok, I REALLY like the styrofoam peanuts and fan idea so far. Combining that with the trampoline would be sooooo fun.

I have a room like this in my house. It's just empty. I honestly haven't been into it in about 6 months...Hopefully no one stole it....It used to be the dog's bedroom, but she tore the carpet up.
Learn to shape surfboards. Mavericks is right there. You could buy blanks and make custom Mavericks boards. Outfit the extra room with a ventilation system and you're all set.

Do you like wine? Put in hardwood floors if you don't already have them, change out stained glass for the windows (ok this is extreme), build or purchase a nice wine storage area, and build a wine tasting bar with stools. Install stereo system and there you go!

You could create a SNOW room! I went to a party with a snow room once. It's similar to the styrofoam room, except it also had that fake spider web stuff (kind snow-ish) all over the walls. Fill with styrofoam and an occasional white bean bag.
I'm partial to dens. Cozy, curl up, lots of books, overstuffed sofas and chairs. That's my answer.
Then there's the other answer: massage room.

I personally would throw down an industrial floor mat and move my tuning and waxing vices inside, along with my bike stand and tools. Make it a ski/snowboard waxing slash bike repair station (maybe even shape surfboards too if you are that ambitious). But only if it is well-ventilated. If it's not, then I vote grow room.
