Even if you are not on the vegan tip, this guy's show is interesting as he reverse engineers a lot of processed vegan stuff or he tries to come up with a vegan option that tastes or at least has the texture of its non-vegan counterpart...he has multiple shows on trying to make the best vegan bacon, for example.
The other cool thing is that he often fails or what he is trying to make doesn't come out perfect, so he will do follow-up shows where he tries another avenue of experimentation.

Richard Bayless was the only one I have ever liked. Some amazing real Mexican food.
Love that guy. Years ago when the wife and I did nothing but travel to wonderful restaurants around the globe before children and life killed that fantasyland we were eating at the bar at Frontera just to eat his molé (which was fantastic). This was a bit before he blew up so he was in there and next door all the time. Rustic cut chicken in the molé meant a small bone or two here or there, no big deal, more flavor I say. So here he comes out of the kitchen to talk to the few of us at the bar and he stops over to us just as I’m spitting a big ole chicken bone into my napkin.
He smiled and walked directly to the couple next to us. I still kinda laugh about how that played out.

I forgot about Doña Angela's De mi Rancho a Tu Cocina. I honestly love this project, it started as a granddaughter filming her grandma making pretty much every recipe she ever cooked in her Mexican ranch kitchen somewhere in Michocan. It's now past 3m subscribers. There's just an honesty about it, just watching grandma cook the way she always has. And yes, youtube's autogenerated subtitles do moderately ok, but sometimes are terribly off.
